This is quite honestly one of my favourite recipes and if I could have it every day I would! I made this for 5 of us on holiday (so LOTS of food). So please feel free to cut this recipe in half. Just a word of warning, I eat quite a lot so I often over cook – so if the recipe is ever too much please cut down! Although the picture doesn’t show it I made potatoes and rice with this dish (my sister insisted!). I also served this with some homemade coleslaw – you can find the recipe here.
So anyway this dish is super tasty and oh so simple.
Serves 6.
Ingredients
2 pork loins
1 onion
2 garlic cloves
1 red chilli – add more if you like it spicier!!
Chestnut mushrooms – lots
500g creme fraiche
Handful of new potatoes or Rice – enough for 6 (or both!!)
Method
Chop some new potatoes and put in a pan filled with cold water and bring to the boil. Drizzle some olive oil in a baking tray and put in the oven at 180 degrees Celsius while the water boils. When the water has boiled, drain and put in the baking tray in the oven (be careful of the hot oil). Toss and season and put back in for 40 minutes. Ignore this part if you have serving only with rice.
Take the pork loins and chop into slices about 2cm thickness. Heat some oil in a pan, season the meat with salt and pepper and cook in the pan about 5-6 minutes each side depending on thickness. You want this to be cooked through (not just browned) but not too tough. After the pork has been cooked, put on a plate and cover with foil.
Put some water on to boil and cook the rice to packet instructions.
In the same pan (and a second also if you’re cooking as much as I did!) add a little oil and gently fry the onions, garlic and chilli for about 5 minutes. You want the onion to be soft and he flavours to be infused. (The white onion I bought went mouldy 😦 so I made use of a red onion I had – either works).
Add the chopped mushrooms and let these cook for about 5 minutes. Add about 2 tablespoons of white wine and let this come to the boil for a few minutes. Turn this down to a simmer and add the crème fraiche. Let this simmer for a few minutes and thicken.
After that add the pork back into the pan and let everything cook together for a few minutes.
Serve alongside the potatoes/rice!
