Side Dish: Truffle Parmesan Fries

These are the MOST in indulgent fries ever but so so good. I did use frozen thin cut fries this particular pic, but you can make your own 100% and I have described the method below!


2-3 large baking potatoes/Frozen chips


Truffle Oil


Peel the potatoes and cut into thin chip like shapes. Put into a bowl, fill with cold water and leave for about 30 minutes.

After this time, drain the potatoes and pat dry.

Heat the oven to 180 degrees Celsius and add a baking tray in the oven with a drizzle of olive oil for 5 minutes.

Take the baking tray out of the oven and add the fries tossing so they are all covered. Now drizzle over some truffle oil and toss again*.

Put in the oven for 30-40 minutes. At about 20 minutes take them out and drizzle a little more truffle over and toss. Put back in the oven for the remaining time.

Meanwhile, grate a tonne of parmesan.

When the potatoes are done, put in a bowl, drizzle over some more truffle oil and top with the parmesan. Enjoyyyyy!!!

*If using frozen chips add to the oven and when they have been cooking for half the time, add the truffle oil. The rest of the process is the same.
