Chorizo & Prawn Pasta

This is an absolute favourite in our flat and a total go to when we don’t know what to cook! Only requires 7 ingredients and takes no more than 30 minutes!

Tagliatelle (approx 100g pp)

Chorizo 125, chopped into small chunks

Prawns 150g (cooked or raw)

1 garlic clove, grated

1 lime, zest and juice

1 tbsp creme fraiche

Parmesan, for the top

Coriander, optional

In a bowl add the prawns with the garlic, lime zest and lime juice. Stir to coat, cover and pop in the fridge for at least 30 mins.

After this time, pop a pan of water on to boil and cook pasta to instructions.

After about 5 mins from when you put the water on, add the chorizo to a frying pan and let this cook for about 5 minutes on a low heat. After this time, add the prawns and heat these through for about 3-4 minutes. Stir and let them incorproate the lovely chorizo colour and flavour.

Drain the pasta and add it to the frying pan with the chorizo and prawns (turn off the heat) and toss with a squeeze of lime and some black pepper.

Add the creme fraiche and toss once more to incorporate. Serve with some topped coriander and a little grated parmesan.

I really hope you love this one, it’s an absolute fave of mine!

Love, A x
