Cod – Two Ways

I wanted this post to demonstrate how easy it is to cook a delicious but quick meal when you fancy something light but just do not know what to have! Chances are, you will have some of this already in your fridge or freezer, but if not it can all be purchased very easily on your way home from work. Scroll down to check out a serving suggestion!

Option 1

Ingredients – Serves 4

4 pieces of cod – I use frozen

Handful of flat leaf parsley. finely chopped

4 slices of white bread – crusts off

1/2 red chilli, finely chopped

1 clove garlic, crushed

1/2 lemon, zest

Salt and Pepper


In a blender add the garlic, lemon zest, chilli, parsley and bread broken into pieces. Blitz until crumbed!

In a large tray add the pieces of fish and top with the breadcrumb mix and a drizzle of oil. Bake in the oven at 180 degrees Celsius for 20-25 minutes. 


Option 2

Ingredients – Serves 2

2 pieces of cod – I use frozen

2-3 shallots, finely sliced

1 lemon, sliced

1-2 cloves garlic, finely chopped


In a small tray add the shallots, lemon and garlic.


Top with the cod, drizzle with olive oil and bake in an oven at 180 degrees Celsius for 20-25 minutes. 


Serve with:

Handful of new potatoes, halved

Large knob of butter

Handful of finely chopped flat leaf parsley

2 cloves of garlic, grated

Green beans



When you put the cod in the oven, add the new potatoes into a pan with some cold water and cook on the hob for 10 minutes.  Add the green beans for a further 5 minutes. 

When you’ve added the beans, in a small pan add the butter and let this melt gently. Then add the parsley and garlic and mix together. 

Drain the potatoes and beans and put the potatoes back in the pan. Add the melted butter to the potatoes and stir to coat them in the gorgeous garlicky butter.
