Tuna Pasta Bake

I made this lovely dish one wet Thursday evening. This big bowl of cheesy pasta was exactly what we all needed that evening! There is nothing more satisfying and comforting than a big bowl o’ crispy pasta and this did the job. Super super easy to make and very yummy! I hope you love it as much as we did!

Ingredients – Serves 3/4

320g tinned tuna (in water)

2 medium cloves garlic, finely chopped

4 spring onions, finely chopped (some on the diagonal)

Penne/fusilli pasta (approx 80g per person)

Cheese Sauce:

40g butter

25g plain flour

15 fl oz (445ml) milk

Approx 2-3 tablespoons grated Parmesan, plus a little extra for topping

2-3 tablespoons of breadcrumbs

 

Method

Cook the pasta to packet instructions.

In a frying pan, heat a little oil and add the garlic and 3 of the chopped spring onions. Cook for about 5 minutes until soft. Remove from the heat.

In a saucepan it is time to make the sauce! On a medium heat add the butter. When this has melted, remove from the heat and carefully whisk in the flour. Put the pan back on the heat and pour in the milk a little at a time continuously whisking to ensure no lumps! Bring to the boil, at which point it should start to thicken. Keep whisking! When it has thickened, season with some pepper and stir in the 2-3 tbsp of Parmesan.

When the pasta is almost cooked, heat the oven to approx 180 degrees celsius.

Drain the pasta and pour into an deep oven proof dish. Add the cheese sauce, the garlic and spring onion mix and finally open and drain the tuna and add this. Mix it all together in the pan.

Top with the remaining Parmesan and pop in the oven for about 10 minutes. As this starts to bubble on the top, remove briefly and sprinkle over the breadcrumbs. Pop back into the oven for a further 10 minutes or until the top has nicely crisped up.

Serve in bowls with the remaining spring onions.
