I made this the other week when I was feeling ridiculously under the weather and feeling sorry for myself! Ramen is your friend when you’re ill! It seems a lot here but its actually so easy to make and you can chill out for a bit while the ramen simmers!
Ingredients – For the Stock
2 star anise
1 cinnamon stick
Chili slices
1 tsp toasted coriander seeds
Half an onion
Knob ginger, finely chopped
1 garlic clove, finely chopped
1 veggie stock (I recommend the stock pot not cube)
Ingredients
Mushrooms, sliced
Half red pepper, sliced
I breast chicken, flattened – s+p, sprinkle of Chinese five spice and cinnamon
Garnish
Half red onion, finely chopped
2 spring onions, finely sliced
Handful coriander
Method
In a deep pan, gently fry the onion and the garlic for a few minutes. Add the ginger and chilli slices and fry for 1 minute. Add the star anise, cinnamon stick, coriander seeds and the veggie stock and stir for a minute or so.
Add 300ml of boiling water to the pan and stir so the liquid colours. Let this come to a simmer and leave this simmering gently away for at least 1 hour. Check occasionally.
After 40 minutes, wrap the chicken breast in cling film and bash with a rolling pin until its flattened to approx. 0.5cm.
Sprinkle over each side with salt and pepper, Chinese five spice and cinnamon.
Slice the mushrooms and red pepper and fry them gently in a pan for 5-10 minutes. Set the mushrooms aside and add the red pepper to the pan with the simmering stock.
In the same pan heat approx 1-2 cm of vegetable oil in a pan. Add the chicken and cook for approx 6 minutes on each side.
Add the noodles into a bowl and pour over some boiling water and 2 tablespoons of the stock mixture (in the pan) to cover them. Leave these aside to cook.
Remove the chicken and slice it across the width.
Slice red onion and spring onions and a few more chilli slices.
Time to put your ramen together!
Ladle some stock into a bowl. Add the noodles, the mushroom and the chicken slices. Garnish with the spring onions, red onions, a few extra chilli slices and some coriander!
