Sweet Potato with Goats Cheese & Bacon

This is the naughtiest dinner ever but so so good. If you just fancy something a little cheeky but can’t be bothered to do much cooking! The mix of the red onions and goats cheese with the sweet potato is just divine!

Ingredients

1 Sweet Potato

1 Goats Cheese Ring, halved lengthways 

1/2 Red Onion, finely sliced

3-4 slices of streaky bacon, sliced 

 

Method

Heat the oven to approx 200 degrees Celsius. Pop the sweet potato in a tray and prick all over with a knife. Drizzle over olive oil and some salt and pop in the oven for about 1 hour 15 minutes. 

After about 50 minutes, gently fry the bacon in a try until nice and crispy. 

In a frying pan, caramelise the onions. To do this, heat some oil in a pan and add the onions. Cook gently for 15 minutes, stirring regularly. When the onions are cooked and slightly golden add 1 teaspoon of brown sugar and 1/2 tablespoon of balsamic vinegar and cook over a low heat for 5-10 minutes. This should make them nice, sticky and caramelised.

After 1 hour and 15 minutes, the sweet potato should be lovely and crispy on the outside and soft on the inside. Slice it lengthways down the middle, not going all the way to the bottom! Fill with 2/3rds of the onions and 2/3rds of the bacon and finally top with the goats cheese.

Pop back in the oven for 5-10 minutes until the goats cheese is nice and melted! Top with the final 3rd of bacon and onions!
