Side Dish: Cauliflower Cheese

It’s been a while since i’ve done a cheeky side dish so I thought I would give you this incredibly simple way of spicing up a portion of cauliflower!

Ingredients

Cauliflower, chopped into small florets

40g butter

25g plain flour

15fl oz milk

A load of grated cheese – a mix of cheddar and parmesan works great for this!

 

Method

Bring a pan of water to the boil and add the cauliflower for 4 minutes. 

Preheat the oven to about 180 degrees Celsius. 

On to the cheese sauce:

Melt the butter in a pan.

Once it has melted, remove from the heat and whisk in the flour.

Return the pan to the heat and slowly whisk in the milk, a little at a time – hopefully if you whisk well you should have no lumps!

Once all milk is in, bring it to the boil and it should start to thicken. Keep stirring to make sure it doesn’t stick to the bottom of the pan. As it starts to boil, add the cheese and stir in with some pepper. It should get nice and thick at this point – if it doesn’t keep stirring it on the heat. 

Once the cauliflower is boiled and the cheese sauce is ready. Drain the cauliflower and transfer to an oven dish. Pour over the cheese sauce. 

Pop in the oven for 15-20 minutes until the top is nice and crispy! 

Top tip: add some breadcrumbs to the top about half way through to add to the crispiness!
