Risotto is such a comforting meal and this one feels so fresh! It’s crazy quick to make and tasted so good!
Ingredients
3 shallots, finely sliced
300g arborio rice
2 x garlic cloves, crushed
Large handful of parsley, finely chopped
3 tbsp wine
100ml single cream
1 lemon, zest and juice
200-250g smoked salmon, sliced in strips
1-1.5 litres of hot water or stock
Method
Add a little oil to a pan and gently fry the shallots and garlic. When soft, add half the lemon zest, half the chopped parsley, the wine and the rice. Stir to coat the rice.
Add the stock or water, one ladle at a time and as the rice soaks it up add the next. Keep doing this until the rice has softened – taste test occasionally! Add more boiling water if 1-1.5 litres is not enough. Season well with some lovely black pepper.
Remove from the heat and stir in the cream, remaining lemon zest, the lemon juice and the smoked salmon strips.
Finally, stir in the remaining parsley.
