Side Dish: Crispy Courgette

I’ve been a bit obsessed with making these lately – I seem to end up with a tonne of courgettes in my fridge! Ridiculously easy and a great way of switching up the side dishes!


1 courgette

1-2 tbsp breadcrumbs

1 tsp seasoning (I used chipotle spice but chilli flakes/paprika/mixed herbs would work too!)

Salt + Pepper

Olive oil



Heat the oven to 180 degrees celsius.

Slice the courgette into chips. If you want them super crispy, remove the seedy bit before slicing in to chips. I included everything cos, hey, why not! Add to a baking tray and toss with the oil, half the breadcrumbs and seasoning.

Pop in the oven for 15 minutes. Remove and add the rest of the breadcrumbs. Toss and pop back in the oven for a further 15 minutes.

Enjoy! Try these as a side, or dunk into a little sour cream or coconut yogurt with chive!
