Pork Schnitzel

We’ve started a new thing these past two weeks where we are going to try and get most of our meat and vegetables from the butchers, fishmongers and greengrocers for two reasons; 1) an effort to understand a little more where our food has come from and 2) try and live a little more plastic free. The pork steaks from this recipe were from the butcher and they definitely made a massive difference to the taste

The boyfriend requested a schnitzel this week for dinner so I thought why not! I’ve made a chicken one before (you can find this recipe here!) so I thought I’d give a pork one a go! Something about this dinner was absolutely fantastic! Realising when I got home that we had no eggs  to bind the breadcrumbs so used honey instead and I think the sweetness really added something. The apple in the coleslaw also gave it a real sweet taste and some extra crunch in a usual classic coleslaw.

3 pork steaks

80g breadcrumbs

1 tsp dried sage

1/2 tsp smoked paprika

2 tbsp honey

1 apple

2/3 of 1 red onion

1 small white cabbage

1 carrot

1/2 lime, juice

1 tbsp mayonnaise

1 tbsp natural yogurt

1-2 Sweet Potato

1/2 tbsp apple cider vinegar



Peel and chop the sweet potato into cubes. Add to a saucepan, fill with water and bring to the boil. Leave to boil for 5-10 minutes until soft. Drain and pop in a baking tray. Drizzle over some sunflower oil and the apple cider vinegar and roast in the oven for 20-30 minutes (180 degrees celsius fan).

Thinly slice the white cabbage, red onion and the apple and add to a bowl. Peel and grate the carrot and add to the bowl with the mayonnaise, natural yogurt, lime juice and a good grind of black pepper.  Set aside.


In a bowl, mix the breadcrumbs, paprika, sage and some black pepper and then pour on to a plate.

Wrap each pork steak in some greaseproof paper or cling film and bash with a rolling pin until about 1 cm thick. Brush over some honey on to each side and then press into the breadcrumb mix.

Add a sunflower/vegetable oil to a deep pan (about 1cm of oil) and let this get hot. Turn the heat down to a medium heat and add the pork steaks and cook for 3 minutes on each side. Remove from the pan and cover with foil until all the steaks are cooked.


Slice each pork steak up and serve with some coleslaw and sweet potato wedges!
