The boyfriend and I were spending time at Broadway Market on a Saturday and I really fancied buy some fresh ingredients for our dinner. We got the pork from the butchers and the veg from the market and boy oh boy was it great – you could 100% taste the difference!
Ingredients
4 x Pork Steak
1 x Chilli, sliced
1 x Red Onion, sliced
1 x Fennel, sliced
Handful of chestnut Mushrooms, sliced
Method
In a tray roast the red onion and fennel, drizzled with a little olive oil and some salt and pepper for approx 30 minutes at 180 degrees celsius.
At the pork steaks to a baking tray, drizzle with olive oil, season and lay over a couple of slices of chilli.
Bake in the oven for 20 minutes at 180. Remove from the oven and cover with foil and leave to rest for 10 minutes.
Gently fry or griddle the mushrooms until nice and soft.
Serve the steaks with some mushroom, fennel and red onion and a few boiled new potatoes.
