Goats Cheese and Warm Roasted Vegetable Salad

I had a similar salad in Côte for lunch one day and I knew I had to try and recreate it for our dinner. This was so simple to make and only involves a few ingredients. So so tasty, I fully recommend!


2 x Gem Lettuce, washed and ripped into pieces

1 courgette, sliced

1 red pepper, sliced

1 yellow pepper, sliced

4 x Spring onions, finely sliced at an angle

2 x 100g Goats cheese wheel


Add the courgette and peppers onto a baking tray, drizzle with olive oil and season with some salt and pepper.

Pop in the oven on 180 degrees celsius for about 30-40 minutes. You want them a little crisped up but not over cooked! For the remaining 5 minutes, add the goats cheese to a try and the oven and let this cook.

Lay the gem lettuce over the two plates, and add the spring onions. Top with some roasted veg and top that with a delicious goats cheese wheel.

Yum yum yum. This is truly delicious!
