Tuna Fishcakes

With everything going on the way it is at the moment I thought it was a great time to offer some more inspo on meals to home cook using simple ingredients!

This delicious dinner used store cupboard ingredients we had lying around and was so easy to make! We’ll definitely be having this again soon :).

Ingredients – Serves 4

  • 400g tinned tuna
  • 600g potatoes
  • 2 spring onions/half a white onion, diced
  • 2 cloves garlic, grated/crushed
  • Knob of ginger, grated
  • 2 tbsp soy sauce
  • 2 eggs
  • Plain flour
  • Breadcrumbs

 

Method

Peel the potatoes and chop into cubes. Pop into a pan, fill with water and bring to the boil for about 10 minutes. 

Gently fry the onion and the garlic in a little oil until soft.

Add this to a bowl along with the the drained tuna, the ginger and the soy sauce and mix together. 

When the potatoes are soft, drain and mash until creamy. Stir into the tuna mix. 

Form into 8 patties and pop on to a plate and put into the fridge for 10-15 minutes. 

Meanwhile, whisk the 2 eggs into a bowl, add the flour to a plate and the breadcrumbs to a plate. 

After 15 minutes, drop each fishcake into the flour, then the egg and finally coat in the breadcrumbs. 

Head a good slug of oil into a frying pan, get this nice and hot and add the fishcakes for 3 minutes each side. Do in batches if necessary!

Serve with salad and wedges!
