Chilli Salmon + Potatoes

It’s the middle of the week and you have no idea what to cook. THIS will sort you right out.


Salmon fillets x 2

1 tsp chilli flakes

1 tsp fennel seeds

Handful of new potatoes, kept whole or half big one

Side salad

2 tbsp sour cream


Toss the potatoes into a large baking tray, drizzle with olive oil add some salt and pepper and roast in the oven on 180 degrees Celsius for 40 minutes.

After 20 minutes, top the salmon fillets with the fennel seeds and chilli flakes and add to the same tray as the potatoes and carry on roasting everything until 40 minutes is up.

Remove from the oven, plate up and top the potatoes with some sour cream – it makes the dish phew just that extra special trust me!

Serve with side salad!
