Winter is cominggggg which means, time for Chilli baby! This is one of my favourite things to eat on a Saturday night when it’s cold and miserable outside! If you’re looking for something veggie, don’t forget I have a bean chilli on my blog as well.
Ingredients
400g kidney Beans
400g Chopped tomatoes
1 tbsp tomato purée
2 tsp chilli flakes
2 tsp chipotle
1 tsp cumin
1 tsp paprika
500g lean beef mince
1 onion, finely chopped
2 garlic cloves, finely chopped
200ml beef stock
1 roasted red pepper, chopped
To serve: rice or potatoes/potato skins, sour cream, avocado slices
Method
Fry the onion and the garlic until soft. Add the mince and let this brown slightly.
Add the chilli flakes, cumin, paprika and chipotle and stir to ensure everything is covered in flavour.
Add the chopped tomatoes, kidney beans, red pepper, tomato purée and beef stock and stir.
Lower the heat and leave to simmer for 45 minutes.
Serve with the potatoes or rice and all of the toppings!
