Side dish: Cumin Carrots

I often think perhaps I prefer the side dishes to the main meal – which probably explains why I love sharing plates style restaurants as you get to have a bit of everything. I’m never satisfied with just the main dish, I’ve always got to have something else to enjoy alongside it!

These carrots are soo tasty and work incredibly well alongside some miso chicken or even your Christmas turkey!

Ingredients – Serves 2

1 large carrot

1 tsp cumin

1 tbsp honey

1 small knob of ginger


Heat the oven to 200 degrees celsius (180 fan).

Peel the carrot and slice into small batons. Pop these in a saucepan, fill with water and put on the hob bringing them to the boil. Once the water is boiling leave them here for about 5 minutes until the carrots are soft. Remove from the heat, drain and put the carrots into a baking tray.

Drizzle over the honey and a dash of olive oil and toss the carrots. Then add the cumin and grate the ginger. Toss again and put in the oven for about 30-40 minutes until the carrots have caramelised.

Here I added ginger slices rather than grating.

Remove from the oven and serve alongside something delicious!
