Oh my god I love aubergines so much. If I could eat one thing for the rest of my life I think it would be aubergines. These are delicious and a great side dish plus they’re so easy to make.
1 aubergine, cubed
1 tbsp soy sauce
1 tbsp olive oil
Heat the oven to 200 degrees celsius (or 180 fan)
Add the aubergines into a bowl and drizzle with the olive oil and soy sauce. Toss so that every piece is coated.
Throw into a baking tray and cook for 30-40 minutes. Turn half way through if you can (don’t force them if they’re a bit stuck!)
Once all crispy and caramelised, remove from the oven and serve!
