Griddled Lamb Chops

If there’s one meat I love, and one that I probably couldn’t go without it would be lamb. My favourite way to have them is marinated for ages to soak up the flavours and then griddled on the hob. What I love about this recipe is it has all the flare of a fancy meal out, yet can be made at home in the quickest time! It’s a great weekend dish.

Ingredients – Serves 2

4 lamb chops

1 tsp fennel seeds

1 tsp chilli flakes

1/2 tsp dried mint

1 glove of garlic, grated

2 tbsp olive oil

Method

Mix the oil, garlic, chilli flakes, fennel seeds and dried mint together. Add the lamb chops and toss all together. Leave to rest out of the fridge for 1 hour at least (you want the lamb room temperature).

Heat a griddle pan on a medium heat until hot. Add the lamb chops and cook for 3 minutes on each side. Leave to rest for a few minutes and serve with some delicious sides!
