Roasted Red Pepper Pasta

Ridiculously easy pasta dish that is an excellent way of using up stuff you’ve got in the fridge and especially those roasted red peppers where you buy a whole jar and only ever need one!

Ingredients – serves 1

75g pasta

1/4 roasted courgette, sliced (link recipe)

2 roasted red peppers, sliced

1 tbsp roasted red pepper juice

Optional: 1 tbsp creme fraiche


Cook the pasta to packed instructions. Drain (keeping 1/4 cup of pasta water).

Mix the pasta with the pasta water, roasted courgette and red peppers and the tbsp of juice from the red pepper jar. Grind lots of black pepper. Option to include a small amount of creme fraiche at this point.
