I love a humble potato. I mean, is there anything better than a potato on the side? (No, is the correct answer ;)) I tried a new roast chicken dish for Sunday roast and thought I’d go a little crazy on the sides. These maple and miso potatoes were delicious! So easy and simple and added a little sweetness to our roast chicken.
Ingredients – serves 2
2 handfuls of new potatoes
1 whole head of garlic
1 tbsp maple syrup
1 tbsp miso paste
Method
Heat the oven to 180 degrees celsius.
Chop the potatoes into cubes. Toss with the maple and miso paste.
Throw the potatoes into a baking tray and add a tiny drizzle of oil. Slice the top off the head of the garlic and add to the tray.

Roast in the oven for about 60 minutes – tossing half way through and checking on them.
