Onion Bhaji Burger

I love a veggie burger and to be honest I often choose them over a meat burger even outside of veganuary. I find them much lighter and love the different flavours. I’ve made some delicious ones before but I wanted to try something new this week and who doesn’t love an onion bhaji so why not stick it in a burger! It was honestly seriously delicious !

Ingredients – serves 2

1.5 white onions

1/2 green chilli

1/2 tsp chilli powder

1/2 tsp turmeric

1/2 tsp garam masala

1 tsp baking powder

100g flour

100ml flour

4 tbsp vegan greek yogurt

2 tbsp mint sauce

1/4 mango

1/2 tsp white wine vinegar

1/4 tsp sugar

1/4 tsp garam masala

2 burger buns, sliced in half

Method

To make the bhaji’s I used this recipe but instead of making small bhajis I split the recipe into 4 to make 4 bhajis.

Meanwhile, slice the mango into fingers. Mix with the white wine vinegar, the sugar and the garam masala and let this marinade. Mix the greek yogurt with the mint sauce and set aside.

Fry the onion bhajis as per the recipe and meanwhile dollop the yogurt on each side of the bun and add a couple of slices of mango to the bottom bun.

Lower two onion bhajis on to the mango and top the burger!
