My partner and I have bitten the bullet and decided to order a weekly fruit and veg box from Abel and Cole here in the UK. It’s something I’ve been wanting to do for such a while but with the pandemic it became simpler to just order everything from the same place. However, now with a real spurt of inspiration again I thought now is the time to start! So I thought it would be really fun to start a weekly section on my blog where I let you know what was delivered and then what I created from it! Some recipes will be other peoples and I’ll give you all the information. Others will be own creation and these recipes will be released soon! Do you get your fruit and veg delivered?
To make things a little easier, at the beginning of each month I’m doing a big delivery of all cupboard foods such as lentils, chickpeas, chopped tomatoes, pasta, rice etc and a few cheeses (as these last a while!). So I know I’ve always got things I can use to make dinners – I may just need 1 or 2 extra bits.
What was delivered –
- 460g diced chicken breast
- 400g minced beef
- 2x hake fillets
- 7 parsnips
- 8 carrots
- 1 broccoli
- 3 red onions
- 2 avocados
- 1 pointed red pepper
- 1 fennel
- 1 bag of salad

Thursday: Chicken, leek, carrot, pea and red onion pie – recipe coming soon!
Oh my goodness this was delicious! It felt like health in a dish haha. It was so full of goodness and you could just taste the quality of the chicken and the vegetables. It was so warming as well – perfect for these cold nights!
Friday: Lentils, peppers and gorgonzola – a Nigel Slater recipe
So I appreciate this does look kind of weird haha (for a start I had to use stilton instead of gorgonzola) but it tasted SO good. You’d think it wouldn’t taste good looking at that picture I’m sure, but the combination of all the bits just won!
Saturday: Steak, potato wedges, caramelised red onion
So disclaimer, the steaks did not come in the box! Fun fact, we actually bought this to have on New Years Eve but we ate too much food before hand that they ended up straight in the freezer as I was doing veganuary! So this was a great great steak as we went all out (being New Years haha). But the potatoes and the red onion were all in the box and holy hell THESE WEDGES. In fact this whole meal was just incredible.
Sunday: Parsnip and potato fritters with parmesan and lemon salad – recipe coming soon!
Ooo these were good and very easy to make. A great way to use up leftover/scraggly potatoes and parsnips. And the parmesan salad just added a light extra. We had this for lunch.
Monday: Hake, parsnip fries, herby sauce, roasted broccoli and peas – recipe coming soon!
We got a LOT of parsnips as you can see above so I had to get creative with ways to use them. These parsnip fries were super tasty and went really well with the fish and veggies. Such a simple meal but so great.
Tuesday: Carrot, parsnip, lentil, avocado and feta salad – this came from a bbcgoodfood recipe with a few tweaks.
This felt so healthy WOW it was delicious. Also included some.. you guessed it.. parsnips! I’ve never had to find a way to use this many parsnips before ha ha. But THIS is the joys of the box and why I wanted to start sharing the recipes I create or use so if you receive a box one week with so much random stuff in it you could revert back to this!
Wednesday: Beef kofta’s, flatbreads and fennel, carrot + red onion slaw – recipe coming soon!
Oh my god. You could just TASTE the quality of this meat wowser. A dish that’s great for using up so many of the leftovers – I can’t wait so share the recipe on this one.
I hope you enjoyed this – really looking forward to bringing more fun weekly meal plans using the wonderful variety we get from our food deliveries each week!
