Another delicious recipe from some veggies in our weekly veg box. I added the potato to mix things up but you could easily just stick with parsnip in these as the flavour was delicious. These would be an excellent side dish or they make a delicious lunch!
Ingredients – Serves 2
1 potato
1 parsnip
1 spring onion, finely chopped
1 tbsp olive oil
salt + pepper
1 tbsp flour
1/2 tsp chilli flakes
Method
Peel and grate the potato and parsnips. Add to a bowl with the spring onion, flour, chilli flakes and the oil. Season and mix together.
Heat some oil into a large frying pan. Once the oil is hot take about 2 tbsp worth of the potato and parsnip mix and add to the frying pan. Gently flatten with the back of a spoon to make them into rosti shape. Let these cook for about 5 minutes on each side on a medium – high heat. Cook as many as you can fit in a pan at one time – don’t let them overcrowd.

Once cooked, pop on a tray and into a low heated oven whilst you fry the remainder.
Serve with a side salad of leaves, olive oil and parmesan shavings and a little drizzle of siracha if you want to add some heat!
These made the most delicious lunch – or have them on the side as an alternative to chips or mash!
