Happy Monday! Another week of what’s in the box! It’s so much fun coming up with recipes and trying to use everything we get! Written down it never seems like a lot but when it arrives it’s amazing how much goodness we get!
What was delivered –
- 500g diced venison
- 2 chicken legs
- 2x pollock fillets
- 1 aubergine
- 2 courgettes
- 1 broccoli
- Carrots
- 1 red pepper
- Watercress
- Potatoes
Thursday – Chicken, chickpea and feta salad – homemade

I cannot tell you how delicious this was – seriously so so good. I can’t wait to share the recipe with you!
Friday – Aubergine Katsu Curry (Meera Sodha)

It’s possible I’m trying to get through every one of her recipes from East. This is utterly delicious and the best part was, I made all the sauce and froze half so I’ve always got some ready to go!
Saturday – Roast chicken legs, roasted potatoes, carrots, peas and Yorkshire puddings! – homemade

Ooof you can’t beat a homemade roast can you! And is it even a roast if you don’t fill your entire plate with food?
Sunday – Venison Pie with mashed potato – homemade

I’ve never had a lot of venison actually, it’s not something I usually buy but this pie was sooo warming and comforting. It felt quite light as opposed to beef which was really good.
Monday – Courgette, red onion and black bean quesadillas – homemade

Wrap, vegetables, beans, melted cheese? Need I say more? So tasty and so easy – recipe coming soon!
Tuesday – Pollock, roast broccoli, mini potatoes and a caper and lemon sauce – homemade

So simple and so tasty. One of my fave ways with white fish and the simple buttery caper sauce was delicious!
Wednesday – Courgetti spaghetti with meatballs and tomato sauce

I had one extra courgette left and I could not think what to do with it! Then I remembered I was sent some delicious meatballs in last weeks box so I defrosted these and had with some spaghetti and made some courgetti to have with the meatballs and some tomato sauce!
Another great week of meals and a lots more home made than last week! I can’t wait to share the recipes with you 🙂
