This was such a tasty side dish – a great way to use up some cabbage which to be frank… is quite hard to find interesting ways to use! I’ve done this alongside a piece of salmon and with lamb kebabs before – both delicious!
Ingredients – serves 2 on the side
100g shredded cabbage
1 shallot, finely chopped
50g soft goats cheese
1 clove of garlic, finely chopped
1/2 birds eye chilli, finely chopped
1/4 tsp fennel seeds
1/2 tsp za’atar
Method
Heat a frying pan on a medium heat with a little olive oil.
Once hot, add the shallot and gently fry for a few minutes until it is soft. Add the garlic and diced chilli for a few more minutes and then stir in the fennel seeds and the za’atar.
At this point add in the shredded cabbage. Stir around so it is covered in the flavour and then add a lid to the pan and leave this cooking for about 5 minutes. You want to fry and steam simultaneously. Stir every couple of minutes.

Once the cabbage is soft add in 2/3 of the goats cheese and stir around to let it melt.

Add to your plate alongside whatever you’re serving it with and add the remaining goats cheese to the top of the cabbage!

Can’t say the idea of mixing cabbage and goat cheese would have ever occurred to me! I happen to have some of each on hand though, and now, I am absolutely planning to surprise my wife with this! Thank you for sharing.
