What was delivered –
- 2x cod fillets
- 340g fish pie mix
- 100g smoked salmon
- Carrots
- 1 broccoli
- 1 red pepper
- 1 aubergine
- 200g Cavolo Nero
- 1 white cabbage
- 1 swede
- Potatoes
What I cooked –
Thursday – Teriyaki Aubergine, tenderstem broccoli and rice (Jamie Oliver)

This was incredibly tasty and actually super easy to make! We had tenderstem broccoli left over from last week so roasted this with some chilli flakes and oil and it went perfectly alongside the aubergine and rice.
Friday – Fishcakes, wedges and peas (homemade)

Words cannot describe how delicious these fishcakes were. As soon as I had finished I wanted them all again!! I have such a special place in my heart for fishcakes, they’re one of my all time favourite comfort dinners. Theses ones were insane and I can’t wait to share the recipe with you!
Saturday – Pan fried cod, garlic and lemon Cavolo Nero, spiced roasted potatoes with a red pepper and kale salsa (homemade)

I would never say this normally, but this dinner actually felt restaurant quality haha! I made this all up and when we ate it I just couldn’t believe I had created this! Every element of this meal was delicious and I can’t wait to tell you what I did!
Sunday – Broccoli and mushroom macaroni and cheese

Is there anything better than Mac and cheese on a Sunday? True, it’s no roast dinner but it is comfort galore for the weekend! This was perfect with with additional broccoli and a few cheeky mushrooms that I had lying around. The broccoli was so soft and was a delicious addition. Recipe coming soon!
Monday – Smoked Salmon and Pea Risotto (homemade)

Truly truly scrumptious. You could just taste how fresh the salmon was, plus lots of delicious lemon. We served this with the rest of the Cavolo Nero (cooked with some lemon zest) and it was a perfect accompaniment. I’m really trying to up my vegetable intake, so adding things into dishes and then having extra on the side is a great way to do this!
Tuesday – Swede Laksa (Meera Sodha)

I’ve always been slightly freaked out by swede since I used to be served it in cube form at school and so refused to eat it! But when presented with it in our box I had no choice but to give it a second chance! For anyone unsure about swede – this dish is a perfect introduction to the root vegetable. Caramelised swede and onions and a deliciously spicy noodle soup – quick and easy to make is an added bonus! Worth a try :).
