So Mexican is definitely one of my all time fave cuisines. I loveee quesadillas so so much and actually very rarely eat them but when I do mm mmmm. These are so easy to make and I love that they can be filled with almost anything! P.s swap the cheese for vegan cheese and these are totally vegan!
Ingredients
8 mini tortilla wraps
1 courgette, sliced
1 onion, sliced
1/2 red onion
320g black beans
Cheddar cheese, grated
1tsp smoked paprika
1/4 tsp garlic granules
1/4 tsp chilli flakes
1/4 tsp mixed herbs
1 tbsp oil
Method
Mix the courgette and onions with the garlic granules, smoked paprika, chilli flakes, mixed herbs and oil. Let this marinate for as long as you have!
When you’re ready, heat a large frying pan until hot and add the veggies. Stir regularly until they are all nice and soft and tasty! Remove from the heat.

Meanwhile, gently heat the black beans in a saucepan.
Pile up the quesadillas! Lay a wrap, top with some veggies and beans and sprinkle over the cheese. Top with another wrap.
Dry heat a large frying pan. Once hot add the quesadilla. Cook for about 3-5 minutes on each side – until the bottom is crispy and the cheese has started to melt. Gently and carefully flip over. Cook for another 3-5 minutes until the bottom is crispy.
Slide out of the frying pan and slice into quarters.

Serve hot!
