So this week we were away when the boxes were to be delivered so we had to only get a veg box so it didn’t go off! This was an amazing test to see what I could come up with everything in the freezer, fridge and cupboards! I’m pleased to say I didn’t buy anything!
- 250g Kale
- 1 Broccoli
- 1 Fennel
- 250g Mushrooms
- 3 Leeks
- 1 Cucumber
Saturday – Roasted Feta and Tomato pasta – you know the viral one on tiktok!
It was as good it looks! We freaking loved this! I added some chopped red pepper which really added to it! I can understand why some people found it a bit creamy but we loveddd it!
Sunday – Steak, Mushroom and Kidney Bean Pie – homemade
I some of frozen kidney beans so I thought I’d throw these in as well! This was super tasty and so warming! Served with some creamy mash yum yum!
Monday – Leek Mushroom and Fennel Risotto – homemade recipe coming soon
I love a risotto it’s so creamy and making it in the oven just takes the stress out of it! The rich mushrooms with the soft leeks match deliciously with the fennel.
Tuesday – Chicken, Leek and Peas – Nigella Lawson
An absolute Nigella classic that I love! We had some chicken thighs in the freezer so it was an absolute winner.
Wednesday – Beef koftas, Flatbreads, Carrot and Fennel Coleslaw – homemade
You know I love this dish! It’s just the easiest dish to make so quick and produces such great results!
I love picking new things to make each week as well as going back to my faves! This week was a fun test to see what I create with what we had!
