Is mac and cheese just the most comforting meal ever!? I love it and this was a great Sunday night treat! It’s also a super way to hide some veggies which I added this week and it really added to it!
Ingredients
40g butter
25g plain flour
15fl oz milk
Strong grated cheese – I used cheddar and mozzarella
1 broccoli, the florets chopped
150g macaroni
1/2 tsp mustard
Method
Cook the macaroni to packet instructions. Add the broccoli for the last 5 minutes. Drain and set aside.
Heat the oven to 200 degrees celsius.
Meanwhile, heat the butter in a pan. Once melted remove from the heat and whisk in the flour.
Pop back on the heat and slowly add the milk bit by bit whisking constantly. Keep whisking until the mixture gets thicker and thicker.
Once it’s thick stir in the mustard and lots of black pepper and then 2/3rds of the grated cheese.
Stir through the macaroni and the broccoli and pop in a pie dish.
Top with the rest of the cheese and roast in the oven for 20-25 minutes until the cheese is bubbling!
