Soup season is officially upon is and I flipping love a homemade soup. They are so easy to make and this one is particularly delicious. The best thing about soup is the amount of veggies you can throw in and they’re great for using up any sad looking vegetables at the back of your fridge!
- Serves 2
Ingredients
1 onion, finely chopped
1 garlic clove, grated
Handful of chopped kale, washed
1 leek, finely sliced into rings
200g white potatoes, peeled and chopped into small cubes
500g vegetable stock
1-2 tbsp creme fraiche
Serve with – some delicious fresh bread
Method
Add 1/2 tbsp of olive oil into a large saucepan and gently sweat the onion. Once it’s soft add in the grated garlic, stir and leave for 30 seconds.
Add in the leeks for a couple of minutes to sweat, followed by the potatoes. Stir so everything is combined and then leave for 3 minutes.
Add the stock in and bring everything to the boil. Stir in lots of black pepper and leave to simmer for 5-10 minutes, until the potatoes are soft.
Once the potatoes are soft, stir through the kale.
Remove from the heat and blend all together until smooth. Put back into the saucepan and bring gently to the boil once more.
Remove from the heat and stir in a dollop or two of creme fraiche.
Transfer to bowls, drizzle with a little more creme fraiche and some extra virgin olive oil with a good grind of black pepper.
