I love a good piece of salmon, but I also love a sauce. This one has so few ingredients and it’s really easy – I fully recommend it for a simple weekday supper!
Ingredients
1 piece of salmon per person
A handful of new potatoes per person – halved
150ml double cream
1/2 white onion
Handful of flat leaf parsley, roughly chopped
Method
Pop the oven on to approx 180 degrees (fan). Pop the salmon on the baking tray, drizzle with olive oil and season with lots of salt and pepper. Put in the oven for approx 20 minutes. In the meantime, add the potatoes to a pan, fill with water and put on the hob. Bring to the boil and let these bubble away for about 10 minutes, until soft.
When the potatoes and salmon are almost done, grab a frying pan and put it on a low heat. Add the onion and let this get soft. Add the cream and bring this to a bubble. Stir in the parsley. When the salmon is cooked, add this to the pan with the cream.
Drain the potatoes and plate up with the salmon. Drizzle over the lovely cream sauce!
