Roasted Cod & Potatoes

Having already spent a fortune on our holiday in Crete, we decided it would be a good idea to cook in our villa for a couple of evenings! The ‘Supermarkets’ had a pretty good supply but still fairly limited so we had to work with what we could find! This dish was made up of a load of gorgeous roasted veggies and potatoes and a ‘mystery fish’, which I assume was cod!!

This recipe demonstrates just how easy it is to cook home cooked meals!

Ingredients

Cod x 6

Potatoes x 3 (large)

Selection of veg – courgette/pepper/aubergine

1 lemon

3-4 garlic cloves

Optional – 1 block feta cheese

Spices – basil, paprika, oregano, chilli flakes (if you have them all, if you don’t just use what you have!)

Method

Peel the potatoes and chop into cubes and add to a pan, fill with water and bring to the boil.

Meanwhile chop the veg.

Drain the potatoes, add to a pan and drizzle with a little of the spices (about 1/2 tsp of each) and some olive oil and pop into the oven at about 180 degrees Celsius for approx 1 hour.

After about 20 minutes, put the veg on a separate tray and season with salt and pepper and a drizzle of oil and 1 tsp of dried basil or oregano (if you have this!)

After a further ten minutes, put the cod in some foil, add 3 garlic cloves (peeled), some lemon peel and a squeeze of lemon. Season and fold up the parcel and put in the oven for the remaining time.

**Optional – After ten more minutes pop feta cheese in a pan drizzle with olive oil and bake in the oven for 20 minutes.

Remove everything from the oven and serve up!
