I just made this one up on the spot and oh my goodness it was delicious!! It was so meaty and tasty and worked so well with the fresh courgettes!
Ingredients – serves 2
200g beef mince
2 garlic cloves, grated
100g sun-dried tomatoes, roughly chopped
1tsp harissa paste
250g ready cooked Puy lentils
100g feta, crumbled
1 tbsp sesame seeds
Heat oven to 200 degrees celsius
Half the courgettes and scoop out the insides (save these to one side), leaving about 1/2 cm of flesh. Pop on a baking tray drizzle with olive oil and rub all over.
Heat some oil in a pan. When hot add the mince and let it start to brown. Once it begins to brown add the garlic and the courgette flesh. Add some salt and pepper and stir.
Add the sun dried tomatoes, the lentils and the harissa paste. Stir and let it simmer for a couple of minutes until everything is cooked.
Scoop the mixture into the courgette skins – it will go all over the place! top with 50g of the feta.
Drizzle with oil and bake in the oven for x minutes. top with the rest of the feta and sesame seeds.
