Chicken, Chickpea and Feta Salad

This salad is honestly one of the best salads I have ever made and one I will go to again and again! The flavours were amazing, so so delicious. The soft salad and feta with the crunchy chickpeas and croutons ahh so good! We tried to eat it so slowly to make it last but it was so moreish we couldn’t stop haha! I highly highly highly recommend!

Ingredients

230g chicken diced

200g chickpeas

Watercress (or any other salad leaves)

1/4 red onion, finely sliced

1 carrot, peeled

Croutons – see my recipe for homemade

Feta cheese – about 50g but as much or as little as you fancy

For the Marinade:

1 garlic clove, grated

1/2 tsp paprika

1/4 tsp cumin

1 tsp lime juice

1 tsp mixed herbs

1 tbsp olive oil

For the chickpeas:

1/2 tsp paprika

1/2 tsp mixed herbs

1/4 tsp cumin

1 tbsp olive oile

For the dressing:

1 tsp lime juice

1 tsp sesame oil

1 tsp balsamic 

Method

Marinate the chicken pieces with the garlic clove, 1/2 tsp paprika, 1/4 tsp cumin, 1 tsp lime juice, 1 tsp mixed herbs and 1 tbsp olive oil. Stir so everything is covered in the delicious herbs and spices and pop into the fridge for at least an hour.

Drain the chickpeas and towel dry these so they’re nice and dry. Mix together with the paprika, mixed herbs, cumin and oil.

Heat the oven to 200 degrees celsius.

When you’re ready to get eating, pop the flavoured chickpeas on a baking tray and pop on to the middle shelf in the oven. Heat a frying pan on a medium-high heat. Once hot add the delicious chicken. Let this cook away for about 10-15 minutes until the chicken is cooked through. Stir every couple of minutes to ensure the chicken doesn’t stick to the pan.

Meanwhile, add the watercress/salad leaves on your plates. Top with the peeled carrot and the red onion. Add some salty feta!

Whisk together the dressing ingredients and pour over the salad as is.

After the chickpeas are nice and roasted, remove from the oven and add to the salads.

Top with the delicious, flavoursome chicken pieces and a final drizzle of olive oil (extra virgin if you have it!). Add on some croutons and dig in!
