Mac and Cheese

This is without a doubt one of my absolute favourite meal everrrrr especially when I’m in need of something comforting! My mum makes the best version ever (not sure what she does to make it so special(!)) but she did give me her (super simple) recipe to make for myself!


40g butter

25g plain flour

15fl oz milk

Strong grated cheese – I used cheddar and mozzarella!

Approx 200g of bacon (cut into small strips) /bacon lardons – optional!

Enough pasta to fill the dish – approx 60g per person.


Bring a pan of water to the boil and cook the pasta to the packet instructions.

If using bacon, in a frying pan, fry the bacon or the lardons until as crispy as you like!

Once the pasta is in the boiling water – get started on the cheese sauce!

Melt the butter in a pan.

Once it has melted, remove from the heat and whisk in the flour.

Return the pan to the heat and slowly whisk in the milk, a little at a time – hopefully if you whisk well you should have no lumps!

Turn the oven on to approx 170 degrees Celsius.

Once all milk is in, bring it to the boil and it should start to thicken. Keep stirring to make sure it doesn’t stick to the bottom of the pan. As it starts to boil, add the cheese and stir in with some pepper. It should get nice and thick at this point – if it doesn’t keep stirring it on the heat. 

In an oven proof dish put the bacon at the bottom and then drain the pasta and add it on top. Pour over the cheese sauce and stir a little to make sure it’s all coated – this might be a little difficult if the cheese is stringy but go with it!

Add a little grated cheese on top (I also added some breadcrumbs to brown and crisp up) and cook in the oven for out 20 minutes until the cheese is bubbling!
