Oh wowser – this was such a delicious dinner and so crazy simple! We had it with tacos but you could swap this for a wrap instead if you fancied! Plus you can top it with whatever you fancy!
2 x salmon fillets, de-skinned
1 x red onion, finely sliced
1 x white onion, finely sliced
1 x red pepper, finely sliced
1/2 x yellow pepper, finely sliced
1 x green chilli, finely sliced
1 tsp garlic salt
1 tsp paprika
1 tsp thyme
1 tsp black pepper
To serve: Avocado, natural yogurt, salsa, lettuce, limes
Mix together the paprika, thyme, garlic salt and pepper. Add the peppers, chilli and onions to a pan with some olive oil and half of the spice mix. Stir and pop on a medium to low heat. Keep stirring and allow to cook for 20 minutes – adjust temperature if needed.
Pat each side of the salmon with the remaining half of the spice mix and roast in the oven on 180 degrees celsius for 20 minutes.
When there is 3 minutes left of the salmon, add the tacos on a tray and cook to packet instructions.
Serve with the avocado, salsa, lettuce and natural yogurt and some lime wedges on the side!
