Stuffed Peppers

Stuffed peppers are the easiest thing to make because you can basically make anything base you fancy and stuff it inside!! I made this really creamy one the other week for my housemates!

Ingredients

150g rice (brown or white whichever you fancy)

250g beef mince

1/2 tsp paprika

1/8 tsp cumin

1/4 tsp garlic granules

1/2 tsp mixed herbs

1/2 white onion, finely chopped

1/4 red onion, finely chopped

1/4 chilli, finely chopped

Soft goats cheese

 

Method

Cook the rice to packet instructions. 

Meanwhile, gently fry the red and white onion and the chilli in a little oil. 

Slice the top of the peppers off and deseed the inside. 

Keeping whole, drizzle with a little oil and bake in the oven for about 10-15 minutes. Just so they go a little softer.

When this is nice and soft, add the mince meat with the garlic granules, paprika, cumin and mixed herbs. Stir so the meat is nice and coated in the flavour, pop the lid on the pan and let this cook for 5-10 minutes. Keeping the lid on is not essential, but it keeps the flavours in and nice and strong. 

Drain the rice when cooked and in a bowl mix the rice with the mincemeat/onion mix and a good spoonful of goats cheese. 

Remove the peppers from the oven and stuff with the rice mixture. Pop these in the oven at about 180 degrees celsius for 15 minutes. Remove from the oven and add a slice of goats cheese on the top. Pop back in for a further 15 minutes. 

Serve!

So yummy and so quick to make – also incredibly filling! I lived on a stuffed pepper at uni!
